Adapted by KosherEye from a Vitamix recipe Horseradish is an integral part of Seder ritual and a tasty accompaniment year round, especially for fish. The Vitamix makes horseradish preparation a “whizz” — and we love the creamy and red variations as well. This recipe can also be made in a food processor. A Passover friendly recipe. Ingredients: 1 cup (about 1/2 lb.) peeled and chunked fresh horseradish root Directions: Peel and cut horseradish into chunks. Place empty Vitamix container on base and secure lid. Select Variable 1 and turn machine on--slowly increase speed to Variable 5. While machine is running, remove lid plug and drop in pieces of horseradish and other ingredients through the lid . Plug opening until all pieces are grated. Stop machine and scrape down sides of container with spatula. Process about 15 more seconds or until consistency desired. For cream style recipe-- Follow above directions and add 1/2-cup mayonnaise when blending final ingredients. For red horseradish – Add 2 medium sized beets, peeled and cooked, or one 8–ounce can drained beets. Notes: Yield: Approximately 10-12 servings • To maintain color and taste, store in an airtight container in refrigerator; cover with plastic wrap. • When peeling and chunking horseradish root wear gloves and do not touch your eyes!
